Tried something new this year. I was invited to join some friends on a goose hunt in south Louisiana. We went to an outfitters near Jennings, Louisiana, which happens to be at the end of the flyway of the country. The outfitter had the dog, blinds set up and was very good at calling these Speckled Bellied Geese in.

We were hunting in blinds dug into the small levees separating very shallow rice ponds with decoys set up.

Time to check out some new recipes for Goose!

The action was much faster than deer hunting. What is in the pic is the limit for 5 guys. We're allowed only 2 birds a day. I came home with 6 geese and about a dozen ducks.

What was impressive was seeing these dudes fall and whack the ground with a THUD!

Walt, breast out the geese then put them in a crock pot for about 3 hrs on low with some Campell's French Onion Soup mix (the dry mix).  Also, see about having the breasts turned into jerky, that makes a great snack while you're sitting in your deer stand.

The Canada goose season opens tomorrow here.  I'm not gonna go out till about mid week because I hunt with a group of about 10 guys and the first few days of the season are always a mess with guys packed in the blind.

Nice shootin' Walt! Just in time to trim one out for thanksgiving dinner.  :punk: For years when I was young the whole family got together and we always had one roasted turkey, one roasted goose, and one smoked turkey. Them were good times.  :up:

Ours started awhile back. Huge flocks of geese and ducks fly over the house daily. At first all the honking is cool, right now I wish them all dead.....  :lol:

Everyone I've spoken to recommends cooking them in a cast iron pot in the oven. I've got a cool cook book from Chef John False (http://www.jfolse.com/newfindrecipe.htm )

I'll have to check it out!
